To begin the heist, you must obtain the USB devide first, then head to the Management office and type /robbery
Now it's time to hack all the security computers marked on your minimap to get the elevator codes. You can hack a computer and try your luck or hack all of them and try the codes later, up to you.
After you've used the right code for the elevator, access the vault and start raiding it.
Once you've raided the vault and stolen all the gold bars, escape from the casino and head to the hideout in your vehicle to complete the heist.
